Cucumber lemonade
My drink of summer
Coming at you with another addition of farmers market meals……but this one is a drink. Sometimes I get in this headspace where I’m not really in the mood to eat my fruits and veggies. With summer can bring along all sorts of fun travel and events. Which can easily coax me out of routine and all of a sudden all I want to eat is icecream, mayo, burgers, macaroni etc.
If you’ve fallen victim to the icecream cones and hotdogs whispering sweet nothings in your ear, just know you are not alone. We stand together haha. It’s totally normal and just part of life for things to not always be in routine.
The key to infusing some fruits and veggies through all the fun, is making something that feels just as exciting. And to me, nothing screams summer like a nice tall glass of lemonade. Instead of water, we use cucumber juice to pack more of a punch with nutrients. And I promise you no one will have anyyyyy complaints.
Like hello??? The cucumbers have been flowing at my local markets. If you are lucky, you will even find some white cucumbers!
If you don’t have a juicer, no problem. You can easily make this with a blender and nut milk bag. Blend your cucumbers up and the squeeze out the juice in batches with that bag and bingo was his nameo you made some juice. As far as citrus juicer goes, I use a super cheap one that will support all your lemonade needs.

Cucumber Lemonade
Makes 1-2 servings
Ingredients:
2 cups cucumber juice, strained (from about 3-4 large cucumbers peeled)
1/2 cup plus 2 tbsp fresh lemon juice, strained (like 5-6 lemons?)
3 tbsp cane sugar OR honey (see note)
Directions:
Add your sugar in the lemon juice. Stirring until dissolved.
In a large cup or mason jar (I use a 32 oz one), add your lemon juice mixture and then pour in your cucumber juice. Give it a mix to combine everything.
Add a healthy portion of ice cubes and drinkkkkk up.
Notes:
Depending on your mood, you can use honey for a refined sugar free version! Still yummy but a little different from the classic taste. Use a light colored honey or the lemonade will look like murky swamp water
I peel the cucumbers just to get a lighter color. So feel free to skip if you don’t care if the juice is deep green. If you have white cucumbers, you don’t need to peel those.
If you run short on the amount of cucumber juice, you can always add water to get to the 2 cup amount.
For this it is necessary the lemonade is iceeee cold with ice cubes. Can always add more sugar to taste, however try it ice cold first ;)
